One of our favorite dessert queens, Kirsten Tibballs is back on MasterChef Australia this week for an epic elimination and we can't wait! Known for her expertise in chocolate and patisserie, every dessert she creates is a masterpiece in taste and style.
Kirsten shares her delicious recipe for Espresso Chocolate Mousse and trust us, you will make this over and over again. It is deceptively simple to make and guaranteed to impress your chocolate-loving family and friends.
Ingredients
Prep time: 20 minutes Serves: 6 x 200ml jars Difficulty: Beginner
35ml Cold brew coffee
170g Sweetened condensed milk
340ml Bulla Thickened Cream
250g Chocolate ripple biscuits
50g Good-quality milk chocolate block
Method
- Combine the cold brew coffee and condensed milk, then whisk on high speed for 10 minutes, until light and fluffy.
- In a separate bowl, whip the cream to firm peaks.
- In 3 additions, fold the coffee mixture through the cream.
- Break the biscuits into smaller pieces to create a crumble.
- Place a layer of crumble in the bottom of each jar.
- Top with a layer of coffee cream, filling the jar halfway.
- Add a second layer of biscuit crumble and coffee cream.
- Use a vegetable peeler to shave strips of chocolate from the block.
- Prior to serving, top with shaved chocolate and additional biscuit crumble.
